Day 45

Weight: 13 stone 7 lb

Total weight loss since day 1: 1 stone 8 lb

My weight loss has slowed right down now and I've lost 2 lb this week...but if I keep losing 2 lb a week, I will hit my target by mid June and successfully complete my challenge.

After walking the dogs I needed to go over to my friends house to collect her couch that she was offloading due to moving back to the UK. Just managed to fit it into my estate car as it's a really big couch and you can fit about 6 people on it, plus the cats and dogs. So, ideal for my household! 

My old couch now has been moved out of the lounge and now sits on the covered terrace so I can enjoy slumming around outdoors in comfort. 

I spent most of the day doing little jobs that needed doing around the house, plus the cleaning and washing and boring but necessary stuff like that. I did manage to cook a very simple vegan mushroom stroganoff for the family using coconut milk which everybody really enjoyed.

Here's the recipe if you fancy making it:

1 onion
1 clove garlic
1 yellow pepper
250g button mushrooms
sprinkling of a mixture of herbs, whatever takes your fancy
1 tin coconut milk

Fry the onion, garlic and yellow pepper in olive oil for a couple of minutes, add the mushrooms and cook until starting to brown.
Add the rest of the ingredients. Season to taste and reduce the heat so that it bubbles gently for 30 mins. Stir occasionally. 
The sauce will reduce and thicken to a lovely creamy consistency.

And it's all totally vegan!

My food intake was 1 banana for breakfast and then later on I had a green smoothie of banana and chard. I had a few flax crackers with sliced tomato on top for lunch. This took me around to dinnertime where I just threw together my normal salad.


I am considering taking on another dog as my friend cannot take her dog back to the UK because the apartment that she owns there has a no dog policy in the lease. Her dog was introduced to our 'tribe' today and though a bit overwhelming for her, she appeared to be ok with it all.

Over the next 2 weeks my friend will be bringing the dog over so she can adapt more easily to her new environment before being left with us permanently...hopefully.

So, I'm off to Malaga tomorrow, which I'm really looking forward to spending time with my partner and eating good wholesome vegan fare...I will post a few pictures of my little adventure.
