Total weight loss since day 1: 1 stone 6 lb
Weight still the same as yesterday, which is a relief after Sundays outing for lunch.
This morning I started off with my usual green smoothie of spinach, banana but this time I added some apple...this made the smoothie extremely tasty.
Then it was off to the gym and... oh my God did I suffer. I thought I was getting fit, but after this mornings workout I was obviously mistaken. Marina, the owner of the gym did warn me the new workout would be 'muy fuerte' but she obviously has a talent for the understatement.
Most of todays workout focused on CV... hard, long CV and weights for the legs. I will be extremely surprised if I can roll out of bed tomorrow without being very sore.
Looking through my exercise card, there is a heck of a lot of CV work, but I did say to her that I needed a card for weight-loss and she has happily obliged...with a smile!
I made it back home via the supermarket and collapsed on the couch...I even got someone else to put the shopping away.
For lunch I had an avocado, some olives and flax crackers.
Dinner consisted of a large mixed salad and some fresh raw hummus that I made in the afternoon.
This evening I made something new as I wanted to try some different crackers and do something different with the kale...I'll let you know how it goes tomorrow:
Corn Kale chips
4 cups fresh/frozen corn
2 packed cups kale, chopped
1 clove garlic
juice of 1/2 lime
1/2 cup ground flax meal
pinch Himalayan salt
1) Place 2 cups corn, garlic and lime juice in food processor. Puree. Remove to large bowl.
2) Place remaining 2 cups corn in food processor and process until pureed. Add kale. Pulse until chopped fine and well combined.
3) Add corn kale mix to corn mix in large bowl. Stir to combine.
4) Add ground flax and salt. Mix well.
5) Spread 1/4 inch thick on non-stick dehydrator sheets and score.Dehydrate at 145º for 45 mins. Turn down temperature to 115º and dehydrate until dry and crisp (approx 12 hours). You will want to flip them halfway through the dehydration and move to a screen.

No matter how I'm feeling tomorrow and whether I can walk or not, I will still drag myself down to the gym. Wish me luck!
