Day 43

Weight: 13 stone 8 lb

Total weight loss since day 1: 1 stone 7 lb

I can successfully tell you that I fasted all day with just water for substance.

I weighed myself this morning and I was exactly, to the ounce, what I weighed yesterday. However I'm looking forward to getting on the scales tomorrow morning and seeing the results of my fast by being 2-3 lb lighter.

Oh my I was soooo stiff this morning...my legs felt like they didn't belong to me and on the whole I felt quite tired, so thank goodness it was my day off from the gym.  I kept myself busy all morning at a friends house and in the afternoon I decided to make a Curry Carrot Salad. Halfway through making this I thought, I'm fasting and I shouldn't be in the kitchen...but I completed my task and it was very successful.

This recipe is courtesy of Rawmazing and it goes like this:

Carrot Curry Salad

4 cups grated carrots
2 cups snow peas/broad beans, sliced into half each long pieces 
2 cups diced fresh pineapple
1 cup raisins
6 spring onions, sliced thinly

Curry dressing:

1/2 cup cashews soaked for 6 hours then drained
1/2 cup fresh almond milk
2 tsp sweet yellow curry powder
1/2 tsp tamari
1 tbspn agave syrup

Preparation:

1) Toss carrots, broad beans, pineapple, raisins and spring onion together in a large bowl.
2) Please all dressing ingredients in a blender and blend until smooth.
3) Pour dressing over salad and mix through to coat all pieces.

Curry Carrot Salad

This really spruces up an otherwise dull salad of lettuce, cucumber and tomato!

I also made raw chocolate mousse containing avocado, carob powder, dates, agave syrup and orange juice. To compliment this I made a cashew creme,  made up of cashews, agave syrup, vanilla and water. These 2 dishes are really easy to make and go particularly well with fresh raspberries.

Tomorrow I'm back in the gym for some more torture and then off to see a friend in Marbella in the afternoon.
