Day 4

Weight: 14 stone 11 pounds
Lost: 1 lb
Well I have to say that I’m really pleased with my weight loss and at this rate I´ll have my Kate Moss figure back for the summer!
I’m glad to report that the body did not suffer any adverse effects from my experience in the gym yesterday so I decided to head back there for another bash. Salvador, my tall, dark, slim, slightly handsome gym instructor was pleased (or was it a look of surprise?) to see my return and he had even taken the trouble to prepare an exercise card for me….bless him.

Again, I did the usual 10 minutes of huffing and puffing on the bike and this was just the warm up! Then onto the weights, cross trainer (we are not friends), more weights, back on the bike, more weights and I cooled down by walking on the jogger. Now I have 2 days off from the gym as its Sunday tomorrow and a Spanish holiday (3 Kings) on Monday.

Back at the casa, I was feeling inspired, so I put my energy to good use and switched to productive-mode and sliced some mushrooms and put them in the dehydrator (which my lovely assistant cleaned for me beforehand, removing 2 years of dust and cat hairs!) My dehydrator has now been relocated to the spare room/office, where it will receive regular visits from myself and will no longer be neglected.

Continuing with my new-found energy, I set to work in creating not only lunch consisting of a large salad, but also my dinner for tonight (which wasn’t salad!) but a tomato marinara sauce with ‘pasta’ - cunningly disguised as zucchini strips (don’t worry, I haven’t pathetically caved in… it was all raw!)

Then it was time to make a few sweet things…almond milk, a cheeky little Almond Vanilla Kreme and gob-size chocolate balls. All very yum.

Recipe for my favourite gob-size chocolate balls

1 cup walnuts (ground to powder)
12 medjool dates
3 tbsp. carob/cacao powder

Just blend it all together in a food processor, roll into balls and dust with extra carob/cacao powder and stuff into your mouth one at a time until you feel slightly queasy, then…stop.

So after such a long, hard day in the kitchen, I am spending the evening relaxing with a cup of herbal tea, writing my blog and contemplating what movie to unwind with. Tomorrow morning, hitting the organic market to check out all the goodies I can spend my dinero on.

Hasta pronto!
