Day 11

Weight: 14 stone 6 lb

Lost: 1 lb

Another pound bites the dust! So happy at losing another pound in weight and if I can be 14 stone by next weekend I will be grinning from ear-to-ear.

Today I was feeling very tired and lethargic and found it difficult walking the dogs, really had no energy at all...my legs felt like lead weights. Me thinks been overdoing it in gym! So in my worldly wisdom, I decided to give the gymnasio a body-swerve and shifted the tonne of firewood instead...with help from two willing assistants. Now we have enough firewood to last us to the end of the winter.

Oh, good news...I completed my vision board and here's a photo to prove it (ONLY took me three days! Hey, I got there in the end.) 



As you can see, my desires are to win the Euromillions, work from home, have a healthy life, do a yoga course in India, improve my Spanish, go on a cruise, drink Cristal Champagne to celebrate me getting down to my ideal sexy weight and drive around in my Toyota Hilux (but not at the same time). I also need a BMW 1 series to get the groceries at the supermarket as the Hilux is too big for the underground car parks here! 

Obviously there's a lot more I would do with my millions, like travel to India and work with street kids, volunteer at animal sanctuaries where I can give large donations to help them out and maybe even setting up a charity or two of my own in Spain....and of course donate a load of money to my favourite animal charities here. 

So I have sent that off to the cosmos to see what manifests!

Coming back down to Earth...Menu of the day: 1 banana just before shifting the wood to give me energy and then a pint of freshly squeezed organic orange juice to start the day...I wasn't feeling hungry so just had a raw cookie at lunchtime and then I went all the way round to dinnertime without eating anything else. Had my usual salad with avocado and I made an awesome dressing which I am going to share with you lucky people:

Raw Thousand Island Dressing:

2 tbsp apple cider vinegar
1/2 cup raw cashews
1/2 cup water
1/4 cup Extra Virgin olive oil
1/2 cup sundried tomatoes, soaked for 20 mins in warm water
Pinch of sea salt, onion powder, garlic powder and cayenne pepper

Blend it all together...add more water to get the right consistency for you.

So this will probably be my favourite dressing for the whole of next week! 

Also made some flax crackers and I will talk about them more tomorrow as I need to taste the outcome of my efforts...and if I think they are up to standard I may just take a photo and share with you tomorrow.
