No movement on the weight front, stayed exactly the same. I could put this down to three things:
1) I've gained muscle from the gym (because muscle is heavier than fat...)
2) I ate too much raw food yesterday, making up from the day before when I hardly ate anything...
3) Just started a period 'drama'
I think I will settle on the latter two, as I've only been to the gym 5 times!
Not the most exciting day in the world, but I awoke feeling annoyingly good again, so I hauled my booty off down to the gym for another grueling workout...then headed straight back to the Casa to check on my almond and coconut cookies that were sitting in the dehydrator patiently waiting for me.
I decided to try one with a cup of herbal tea of course...and to my surprise they were absolutely delicious....like, the BEST cookies I have EVER made! Or maybe I'm just desperate because I'm eating raw? Here is the not-so-secret recipe (courtesy of therawtarian.com):
2 cups almond pulp
3/4 cup dry shredded coconut
1/3 cup agave syrup
1 vanilla pod
1/8 tsp sea salt
4 dates
splodge of water to stick all together if necessary
Make into cookie shapes (that look much better than my ones do in the picture!) and dehydrate for about 8 hours at 105ยบ.
I wasn't going to take a photo of them so I didn't pay any attention to the appearance...that is why they look like dough or dobs of fudge & raisin ice-cream (which sounds better) instead of elegant cookies! Oh dear...they do taste a whole lot better than they look in the photo!
I very nearly completed my new vision board today but I got interrupted by the wood man (as One does in the Campo!) This lovely young Spanish man was delivering a tonne of wood which I will spend a couple of hours tomorrow morning moving it all out of my driveway and into the store room at the side of the house.
Unfortunately he can't can't get the trailer round there, which means myself and a conscript have to lug a tonne of wood from A to B. This will burn off a few more calories...so I can make another cake, right?
Made a lovely big salad for dinner and even chucked some pineapple in...sweet. My salads mainly consist nowadays of: lettuce, cucumber, tomato, olives, sun-dried tomatoes, carrot, yellow pepper, capers, and sometimes sunflower seeds and raisins.
The dressing I'm addicted to at the moment is made up of:
1 tbsp Dijon mustard
1/4 tsp Balsamic vinegar
3 tbsp Extra Virgin olive oil
1 tsp Lemon juice
Pinch of salt
Little squeeze of agave syrup
Looks like I have a busy day tomorrow with the gym, then the wood-lugging challenge, cleaning chicken coop, finding something to 'throw together' in the kitchen...and completing the 'half-baked' vision board!!
