After my very lazy day yesterday of doing…..well, nothing, except
prepare 2 large salads with a nice mix of the usual suspects, today was much
more productive! I walked the dogs for their usual hour in the beautiful Spanish
countryside with the mountains for a backdrop…and it was so mild that I even
had to undo my hoody…..roll on summer!
Friday was
gym enrolment day and I was looking forward to the challenge….sort of.
A very young
and semi handsome Spaniard called Salvador helped me get started on the bike for
10 minutes (that was enough) followed by a couple of exercise machines. I was
thinking to myself this isn’t too bad, but then he put me on the running
machine (I don’t run) for another 10 minutes. Luckily he took pity on me and
let me walk. Yes, I could do that. Then back on the old weights for some more
pumping iron, very light iron in my case. But then Salvador led me back to the cardio
machines for a gruelling 10 minutes on the cross-trainer and he smiled at me
like he knew this would hurt….I didn’t disappoint him. Afterwards I actually thought
we had finished, but no… more weights and the bike for a period, you guessed
it, 10 minutes. Salvador told me this was a cool down but just sitting there
was no good, I had to pedal….oh.
Well I fell out of the gym door in
the same fashion as exiting out of the pub after one too many brandy and
babyshams. But instead of heading for the nearest kabab shop for a chip kabab, as
one does after a good night out, I took myself off to my local and excellent
fruit and veg shop to replenish my dwindling food stock!
Back home in my cosy casa I set to work on making raw chocolate
pudding and raw paté…but not to eat together. Here´s what I just threw
together:
3 avocados, 8 medjool dates, 3 tbsp cocoa powder and a splash of water
to get the mixture flowing while blitzing in the food processor. Success and
delicious enough for that chocolate hit that I’ve been missing. My next mission
was to make the paté.
1/3 cup cashew nuts, 1/3 cup
sunflower seeds ground into a powder with a coffee grinder and dump into a food
processor. 1/3 cup carrot, 2 celery sticks, pinch salt, little squeeze of lemon
and a tbsp of Dijon mustard whizzed together…voilà!
I consumed 2 large salads (usual
mix) with some sprouted bean sprouts that have been sprouted (!)….they were
good too. I do know one thing, I will
sleep tonight and hopefully be able to walk tomorrow after my exertion in the
gym today.
